Potato Skins

This is a great recipe to go as an appetizer or as a side dish for a cookout.  You will need to the following ingredients:

8 large potatoes

2-3 tbs. butter

3/4 lb. bacon

garlic salt

chopped green onion

cheddar cheese

Take the potatoes and bake or microwave.  I chose the microwave them.

Next you will want to start cooking your bacon!  Yum!

When potatoes are done, cool a bit.  You will then need to slice them lengthwise in half, then each half into thirds.

Here I am cutting them in halves.

And see each half I am cutting into thirds.






Then you need to arrange them into a 9x13 pan.  My potatoes were so large I used a 9x13 and a 8x8!

The next step is to melt the butter.  My recipe calls for 2-3 tbs.  I use a whole stick, sometimes you get dry potatoes and this helps keep them moist!DSCN1949








Once the butter is melted you need to spread over both pans of potatoes.DSCN1952








Then sprinkle garlic salt, too taste.

After this step top with shredded cheese, chopped bacon and green onion.  The finished product should look like this:

See yummy!  Finally, top pan with aluminum foil and bake at 400 degrees for 15 minutes.  They should then look like this:

Serve with sour cream and enjoy!  Trust me they get rave reviews every time I make them.  You can also make them a day ahead and pop it in the oven the day of the party!

Not your ordinary meatloaf

I love to read the recipes that are shared on other blogs.  My family and I are eternally grateful for some of the great ones we continue to enjoy over and over.  So I thought long and hard about what "original" recipe I have come up with and that we enjoy.

This recipe for meatloaf is different from any other I have had.  Since I made it up the ingredients are not an exact science.  The only thing I would not leave out are the first four ingredients, the onions and spices you can add/subtract to your taste.

2-3 lbs. ground beef

1 lb roll Jimmy Dean sausage

3/4 - 1 cup applesauce

1 cup salsa (this is where it is fun, if you like spicy foods use a hotter salsa)

1/2 cup chopped onion

Add the following spices:  garlic, salt, & pepper (sometimes I have added Montreal Steak Seasoning)

Mix all together with your hands.  Put in two meatloaf pans.  Bake at 375 degrees for 1 hour to 1 hour 15 minutes.  Use a meat thermometer to check the doneness.  Enjoy!

One loaf usually feeds our family of five.  The leftovers are great also!   If you only wanted to cook one you could freeze the other one as well.
